L'avis de Gault&Millau

As this year, due to the lockdown, we couldn’t unfortunately visit Bedem restaurant, we publish the review and the score by Gault&Millau Croatia 2020. The Bedem Restaurant is located in the vicinity of the Old Town of Varaždin and access is easy - by car or on foot. The covered and glazed terrace allows guests to enjoy the beautiful view of the fortress even in the winter months. The restaurant offers two menus: meat and fish based dishes. Goose liver pate with home made corn bread, apple and onion chutney, was very delicious. The sous vide duck breast stuffed with apricots was a creative and tasty meal. This modern-day technique of cooking vacuum-sealed meat in the water bath is quite common in this restaurant, so they use it to prepare pork and veal as well. The six course tasting menu will cost you 290 kuna, or 390 kuna with wine pairing. Instead of the usual chocolate mousse dessert take the basil or saffron ice cream. The wine list is solid, the service is great, and friendly waiters, most of whom have professional manners, will do their best to make you feel comfortable. The restaurant is big enough for a large celebrations. This place is a fine example of the traditional and the modern, where delicious dishes are created and enjoyed not only by Varaždin natives but also by the guests of this baroque pearl of Croatia.
