The restaurant of the same name is located in the ramparts of Zadar port of Foša from the 16th century. They offer traditional Dalmatian Mediterranean food in a modern, innovative way. Judging by the number of guests on a rainy April Thursday, this is a very successful formula. We started our dinner with a glass of light Istrian Malvasia. The three-bite couvert attracted us first with its looks and then with its taste. Fish pâté on pink rice chrisps, breaded meatballs on yellow chickpea cream, Japanese gyoza rolls stuffed with octopus - a very interesting and tasty start. The secret of Foša’s success, among other things, is in the daily fresh food. The waiters pointed out that they carefully choose the ingredients in the preparation of meals. They knead and bake their own bread and give special importance to the choice of olive oil. Therefore, we could not resist tasting warm bread and olive oil from a local family farm. For an appetizer, they recommended the scampi carpaccio with grated oysters, which were previously briefly shocked in boiling water. The citrus emulsion poured over the scampi with a dominanting taste of red grapefruit gave the dish a refined note. Sweet and sour green apple jelly added mildness and freshness to the taste of sour citrus and raw scampi. For the main course, we chose a dish with a simple name The Duck. The pink meat of duck breast and crispy skin are a true proof of the chef’s skills in preparing the demanding duck. The beautifully roasted duck was served with duck liver, roast potatoes, zucchini and peppers and topped with duck demi glace. Too bad the vegetables weren’t crispy. We really liked the idea of ​​serving baked fresh liver that can also be spread on bread. When choosing a dessert, we listened to the waiter and tasted the so-called reconstruction of cheesecake with strawberry ice cream and fresh strawberries. Yogurt and mango cream and chocolate lava cake were also available, but the cheesecake was definitely a good choice because of the refreshing homemade ice cream and fresh strawberries - real spring flavours.
