L'avis de Gault&Millau

The unity of a top location, a top interior, a top cuisine and service has finally happened in Split. All of this in Kinoteka restaurant, which can stand alongside the best in the region. Located in the city center, near the Golden Gate of Diocletian’s Palace, its interior and stone arcades will stop every passer-by. The excitement will be even greater if you taste their dishes. An unforgettable experience of amazing combinations of dishes prepared from the best ingredients - either local or traditional, or worldwide famous. On the other hand, there are most often everyday food, which in the hands of a true chef becomes a top dish. With tradition, culture, seasonality, this food becomes exciting and unrecognizable, and the plate is presented as a work of art. For starters, we recommend an appetizer from a selection of excellent cheeses and a good Dalmatian prosciutto with homemade bread and bruschettas with tomatoes. There is also the ingenious Fabergé egg, inspired by famous goldsmith masterpieces. The flavours presented by the chef in this dish fully justify its name. You will find the best in this eggshell: from the silky foam of potatoes, wasabi, white truffles and hollandaise sauce, to best quality caviar on top. This dish is created in a way that cannot be forgotten. We also tasted the excellent tortellini stuffed with foie gras and Japanese Wagyu beef in a great dashi soup. In addition, we were served a Japanese-classic version of Cesar salad: iceberg lettuce, millefoglie with seasonal fruit, caramelized onions, quinoa, parmesan, wakame seaweed, spiced with masterfully prepared Cesar sauce. We also ordered sea bass fillet on kale. The chef showed his culinary knowledge: he prepared a poor food like kale in 5 ways: baked, crispy, cooked, creamy kale delighted us almost more than the sea bass fillet itself. We finished the lunch with handmade premium pralines and it was hard for us to stop because one was better than the other. In our opinion, Kinoteka belongs to the very top of the Split restaurant fine dining scene. You will enjoy the magical ambience and the excellent food.
