Dubrovnik’s Stara Loza restaurant is part of the Palace’s impressive boutique hotel in the historic city center. It is located on several floors in a medieval palace, the renovation of which has breathed a dose of refined luxury to the place. The most desirable places are at one of five dinner tables on the terrace at the top, overlooking Dubrovnik’s rooftops and bell towers. The menu reflects a combination of traditional and modern gastronomy, and is based on fresh local ingredients, from meat and seafood, pasta and vegetables to an amazing array of spices. We started the dinner with a fresh burrata served with confit cherry tomatoes, basil and smoked salt, also with Adriatic prawns spiced with roasted garlic aioli served with seasonal salad. Both dishes are spiced softly with olive oil without which Mediterranean cuisine is unimaginable. Main course followed: well done black risotto with octopus tentacle, shells and cutllefish. For desserts we chose divine figs with Malvasia ice cream and almond crumble, also chocolate mousse with tonka in combination with coffee jelly and raspberry ice cream. The hotel’s wine cellar impresses with its selection of fresh, aged and archival wines, so you can choose from 2, 000 bottles.
