Chef Hrvoje Zirojević announces the third edition of the gastronomic guide Gault&Millau Croatia with fantastic delicacies
"Powerful, steadfast, made to provide food lovers with reliable information about the restaurants they visit." – with those words, Ingrid Badurina Danielsson, director of Gault&Millau Croatia, described gastronomic guide Gault&Millau Croatia 2020 whose third edition will be presented on 3rd of March in Esplanade Hotel Zagreb.
During the Masterclass, Zirojević prepared carpaccio of Adriatic tuna stuffed with goose liver ganache, tuna tartare, anchovies on the black olive ash ground, as well as shrimp and oyster risotto. Therefore, he showed everyone present his passion for the sea, seafood, fish and presented numerous possibilities that the sea has to offer on a plate.
He used Kotanyi spices to prepare his imaginative dishes and his carefully crafted menu was accompanied by delicious wines. Participants had the opportunity to enjoy the blend of the Mediterranean and continental Croatia with selected wines of Feravino Winery: Graševina Dika 2019, characterised by beautiful greenish colours, aroma of medium intensity and a vibrant and mineral taste, and Frankovka Miraz 2016, a deep red wine with purple hue aroma and intense flavour with a clear structure.
This creative workshop best announced the culinary Oscars award ceremony that will take place on the 3rd of March in Esplanade Hotel Zagreb. The third edition of the gastronomic guide will include the largest number of restaurants and their chefs, dedicated professionals of different age and styles, who celebrate their love of gastronomy.
Gault&Millau Croatia 2020 will be richer for 52 new restaurants and 12 new POP places.
