Ines Jurišić, Gault&Millau Croatia Great chef of tomorrow 2026: I want to create dishes that stay in people’s memories for a long time, from every component to the final taste
Ines Jurišić represents a new generation of chefs who combine technical knowledge, creativity, sustainability, and a strong personal identity. This 33-year-old head chef of Bistro Beška in Čakovec demonstrates that local cuisine can evolve and modernize without losing its identity. In her case, this means using contemporary culinary techniques with deep respect for local ingredients and the traditions of northern Croatia. In short, her cuisine honours the past while boldly looking towards the future – and for that, she has won the G&M Great chef of tomorrow award. Born in Čakovec, she entered the world of gastronomy only in her late twenties. Before that, she studied Croatian language and literature and pedagogy at the Faculty of Humanities and Social Sciences in Zagreb. Realizing that this could not be her professional future, she enrolled in International Hospitality and Tourism Management, specializing in gastronomy, at Aspira University College. That’s when she cooked something edible for the first time – stuffed peppers. In her student apartment, proud that she could create “something tasty out of nothing,” she realized she was drawn to cooking. “For me, it was the complete opposite of Croatian studies and pedagogy, because in the kitchen I can create freely. Yes, there are rules, but combining ingredients, designing dishes, flavours… it’s all in my hands. And since I’m hardworking, I realized I enjoy the pace of the kitchen,” says Ines. She gained her first professional experience in the kitchen of Zagreb’s Esplanade Hotel under the mentorship of Ana Grgić Tomić, then moved to the restaurant Theatrium by Filho, where, led by chef Filip Horvat, she embraced more modern culinary techniques. Her next step had the greatest influence on her: at the Korak restaurant in Plešivica, she developed a full understanding of working with local ingredients, seasonality, and the philosophy of sustainable gastronomy. Owner and chef Bernard Korak was the perfect mentor, teacher, and motivator. Before becoming head chef at Beška, she worked in large hotel kitchens – Terme Sveti Martin and Hotel Panorama in Prelog. She has been applying all these experiences through her own culinary philosophy for the past two years at Bistro Beška, owned by her life partner Luka Damjanović. “At Beška, I became an author – but being ‘authorial’ isn’t just about one dish; it’s an entire philosophy, organization, and way of running a kitchen. Every plate is my image, the result of my thinking, experience, and the way I perceive ingredients. I start from classical techniques but interpret them in my own way. My signature lies in flavour and in how I compose a dish,” explains this great chef of tomorrow. Part of her philosophy was to plant a garden from which they now source various varieties of tomatoes, peppers, eggplants, carrots, beets, kale, colourful chard, green beans, and more. In their garden, which she and her partner maintain with grandmother’s advice, they grow thyme, chives, dill, fennel, sage, nasturtium, tarragon, wormwood… They use only as much as they grow, and when a certain vegetable runs out, they change the menu. In past years, they had enough tomatoes to cover the entire season. Another key part of her approach is the zero-waste principle, which for her means respect and responsibility toward ingredients. She strives to use the entire product – through stocks, fermentations, oils, pestos, sauces… When it comes to meat, that means taking the whole animal and using every part. They buy Buša beef from a small producer in Lika, venison from the Fazan Hunting Association in Međimurje, ducks from farm Orehovec in Ludbreg… everything is carved and arranged in-house according to how each part will be used. And what is good food for Ines? “For me, good food begins with top-quality ingredients, the right technique, and harmony on the plate – the same honesty that guides me in my kitchen. That’s how dishes that bring joy, that everyone wants to eat again, and that stay in memory for a long time are created – from every component to the final taste.”

Four years ago, he won the G&M Croatia “Great chef of tomorrow” award, and this year Stiven Vunić became – Chef of the year. The owner and chef of the Zijavica tavern in Mošćenička Draga, who has been building his culinary path for 15 years alongside one of Europe’s most beautiful beaches, has always had a clear goal: a restaurant with a small number of top-quality, carefully designed dishes that emphasize the quality and authenticity of ingredients. Over the years, Stiven has consistently combined fine dining, local identity, and a long-term vision for restaurant development. “Why me as Chef of the year? Probably because I’m honest in everything I do, and my principles are continuity and quality. I’ll tell you honestly – I move at a snail’s pace, because I don’t believe in overnight success,” said chef Vunić. He didn’t expect the award, but at the same time, he is aware of what he and his restaurant represent on Croatia’s gastronomic map. The trophy means a lot to him, but even more importantly, it shows him how much Croatian gastronomy is progressing. And he didn’t end up in this field by chance. At the age of fourteen, while working his first seasonal job in a restaurant, he realized what he wanted to do. He began saving for his own restaurant while he was still a student in waiter training school, and he developed as a chef at the Culinary Institute Kul IN in Sisak. His cuisine is deeply rooted in the gastronomic tradition of Kvarner: he grew up in a fishing family, and his father is one of the longest-serving scampi fishermen in the region. Because of that, he has a deep understanding of fresh fish and the culinary potential of seafood. He systematically promotes the best local ingredients through dishes that rely on tradition but are technically and aesthetically modernized. In doing so, he contributes to preserving local gastronomic heritage while positioning it at a high level of modern cuisine. For his role in promoting regional gastronomy internationally, he has been appointed ambassador of the “Kvarner – European Region of Gastronomy 2026” project. Another key reason why Vunić deserves the Chef of the year title is the continuous development of the Zijavica restaurant, which he has gradually and thoughtfully transformed over fifteen years – from a classic offering of pizza and pasta into one of the most interesting seafood restaurants in Kvarner. This evolutionary approach demonstrates professional maturity, a clear vision, and strong dedication. On this journey, he is accompanied by his wife Tea, who switched from a career in hairdressing to pastry-making, and is now responsible for desserts in their small family “flavour workshop.” “If we managed to turn a beach tavern into a restaurant that encourages guests to discover local fish and small producers, then I believe the whole scene has the strength to grow in that direction. The standard I strive for is never to make anything worse than what I do best – to achieve seriousness and quality in every dish. I eat in my restaurant every day to check the quality of what we offer to guests,” said Stiven Vunić, who most enjoys high-quality fish simply prepared on the grill at Zijavica. Despite everything he has achieved, Vunić continues to invest in knowledge. In addition to exploring flavours on his private travels around the world, he regularly stages in top European restaurants to learn new techniques and approaches, which he then interprets through his own signature dishes at Zijavica. This year, he also agreed to participate in the TV show “Game of Chef,” not out of a desire for self-promotion, but because he is versatile, curious, restless in spirit – and eager for excitement beyond the restaurant business.

At a gala dinner at the Esplanade Hotel, Gault & Millau Croatia awarded annual trophies to the best chefs and restaurants in Croatia: Chef of the Year is Stiven Vunić from the Zijavica tavern in Mošćenička Draga On Tuesday, 17 March, Gault & Millau Croatia celebrated the release of the ninth edition of the bilingual international guide to Croatia in the Emerald Hall of the Esplanade Zagreb Hotel and awarded annual trophies to ten new laureates. While the guests enjoyed the cheese bar of the golden partner Président and the sparkling wine Ruggeri Valdobbiadene Superiore di Cartizze D.O.C.G. Brut, the harpist Doris Karamatić introduced more than a hundred chefs from all over the country to the gala evening with a virtuoso performance. The program was hosted by Frano Ridjan, and the Emerald Hall turned into a stage where passion, work and dedication to cooking were celebrated. The guests were greeted by Ingrid Badurina Danielsson, Director of Gault & Millau Croatia, Valerija Milković from the Croatian National Tourist Board and Monika Udovičić, State Secretary of the Ministry of Tourism and Sports of the Republic of Croatia, and among the guests was Daniele Scaglia, Director of Gault & Millau Italy, whose first edition will be published in 2027. The most important moment of the evening was the announcement of the Chef of the Year 2026, and the prestigious title was won by Stiven Vunić, owner and chef of the Zijavica tavern in Mošćenička Draga. The trophy was presented to him by Iva Kuhtić, marketing director of Président, the leading cheese brand in Europe. The Chef of the Year trophy comes four years after winning the G&M Great Chef of Tomorrow Trophy. It is a logical sequence that confirms the consistency of a chef deeply rooted in the Kvarner tradition and local identity. "I didn't expect it and that's why this trophy means a lot to me, but it's even more important to me that it shows how much Croatian gastronomy is progressing. If we managed to turn a tavern on the beach into a restaurant that encourages guests to discover local fish and small producers, then I believe that the whole scene has the strength to grow in the same direction," said Vunić and especially thanked his wife Tea, with whom he is building his business story. The Great Chef of Tomorrow 2026 trophy went to Ines Jurišić from Bistro Beška in Čakovec, and it was presented to her by Monika Udovičić, State Secretary at the Ministry of Tourism and Sports of the Republic of Croatia. "Every plate I make starts in the garden and ends in the memory of the guest. If Gault & Millau recognized that, then we know that we are going in the right direction," she said full of emotion. The Young Talent of the Year 2026 trophy was won by 25-year-old Danijel Biro from the Josić restaurant and winery in Zmajevac, the first Baranja restaurant awarded with 4 G&M toques, and was presented to him by dr. sc. Irena Peršić Živadinov, director of the Kvarner Tourist Board – European Region of Gastronomy. The best pastry chef is Nika Čavlović (22) from the Zagreb restaurant ManO2, and the trophy was presented to her by Michal Suchanek from La Lorraine Bakery Group. The Chef of the Hall & Service trophy went to Robert Rojnić from the Viking restaurant in the Lim Fjord, and it was presented by Ivana Alilović, director of the Zagreb County Tourist Board. Trophies for a special experience were given to Tvrtko Šakota, owner and chef of the Zagreb restaurant NAV and Mario, Ivor and Svebor  - father and sons -  from the Primitivo picnic area at the Čudesna šuma family farm in Bilje. The trophies were awarded by Ingrid Badurina Danielsson and Dubravka Tomeković Aralica, Executive Director of Gault & Millau Croatia.  Ivanka and Stjepan Grgos, owners of the Kod špilje restaurant in Otruševac, were declared the best chefs of traditional cuisine. The award was received by their daughter Ana Jakolić and chef Milan Jandrić, and the trophy was presented by Ina Sikirić Ivčić and Branka Martinac from the Zadar County Tourist Board. The Chef of Modern Traditional Cuisine trophy was presented to Magdalena Senjković (Vina Senjković Wine Bar, Nerežišća, Brač) by Mislav Matišić, director of the Osijek-Baranja County Tourist Board. The best POP (popular place) is Bota Šare Oyster & Sushi bar in Split, and it was handed over by Krešimir Šakić, director of the Šibenik-Knin County Tourist Board. In addition to the awards, the winners of the annual trophies received a gift of Vesna Miletić's book My Tač, published by Telegram. Valerija Milković from the CNTB handed G&M bars with 4 toke to chefs of 16 of the best Croatian restaurants, and among them NAV from Zagreb and 360° from Dubrovnik also carry the highest rating in the Croatian edition of the guide - 18/20. In addition to a rich gift bag for the dinner guests, all restaurant chefs will have the opportunity to try the new cream and butter from the Président line for professionals - Professionnel. The guests enjoyed the courses created by the chef of the Esplanade's restaurants Ana Grgić Tomić and guest chef Francesco Marchese from the Michelin-winning restaurant Fre within the Réva Resort in the Langhe region. With a welcome drink, premium prosecco Ruggeri Valdobbiadene Superiore di Cartizze D.O.C.G. Brut, small snacks were served – roasted asparagus, poached oysters and La Lorraine focaccia with herb salsa. Dinner began with smoked scallop tartare with caramelized carrots and carrot juice béarnaise with Erdoro Blend One 2023 from Mladina Cellars. This was followed by handmade Piedmontese ravioli del plin, filled with roasted meat and mascarpone in beef jus with Cuvée 2025 from the Josić winery, and an impressive Fassona fillet with flambéed marrow and croquettes with Piedmontese cheese bettelmata, paired with Barola Cannubi 2020 from the Réva winery. The menu was rounded off by chocolate flan with almond sponge, ganache with brown butter and orange sabajon with dessert wine Mediteran 2019 from the Kozlović winery. The gala dinner was served on the plates of the Duke Group, and during the gathering, the guests had the opportunity to find out details about Lexus' exclusive LM – Luxury Mover, a vehicle available for the first time in Croatia, and apply for a test drive. The event was held under the golden patronage of Président, the leading cheese brand in Europe and Croatia, which supports the exchange of knowledge and the development of young culinary talents through its long-term cooperation with Gault & Millau Croatia. La Lorraine Bakery Group, Ruggeri, Réva, Josić, Kozlović and Podrumi Mladina wineries also played a key role. As a special partner, the promotion of the guide was supported by the Croatian National Tourist Board, and the Tourist Board of Kvarner, Split-Dalmatia, Zadar, Šibenik-Knin and Zagreb County, the Tourist Board of the City of Zagreb and the Tourist Board of Slavonia, Baranja and Srijem. Gault & Millau Croatia 2026 among 422 restaurants, bistros, taverns, snack bars, POP bars and pastry shops, records 74 best-rated restaurants, 16 of which carry the prestigious 4 toks. Ten new laureates are the most eloquent proof that the Croatian scene is no longer just a few frequent points on the map. Best POP has a new dream team for the dinner experience
One of the most visited places in the city, Boogie Lab (Best POP 2024 by Gault&Millau), brings something new to its guests every season. Conceived as an all-day gathering place offering breakfast, brunch, lunch and dinner, in a pleasant atmosphere where food, drinks and atmosphere are equally important, Boogie Lab is continuously developing its gastronomic identity. In addition to excellent breads, brioches and croissants, delicious salads and attractive meat dishes, their menu has recently been enriched with a more ambitious selection of evening delicacies. Team of experienced professionals is responsible for that matter: chef Roko Nikolić (G&M 2024 Great Chef of Tomorrow Trophy), top pastry chef Petra Jelenić and renowned bartender Filip Pleteš, whose selection of drinks matches the food. Chef Nikolić refreshed the menu throughout the day, but he especially played around with dinner. The menu is laid out clearly and simply, with the idea that guests build the course of their evening themselves, combining appetizers, main courses, and desserts, ideal for sharing between two or in a larger group. "The evening menu at Boogie Lab is based on three units: small plates, pasta and larger plates. Guests can start with a few smaller dishes, continue with pasta or share one larger dish at the table. Everything is designed as a flexible and relaxed experience, without strict form, but with a clear focus on quality and taste," says chef Nikolić. Among the smaller plates, the standout dishes are the amberjack with apple, celery and ginger, the delicious carrot with lentils, orange and kefir as well as the excellent beef tartare on crispy Boogie brioche. The pasta menu brings more rounded flavors, especially the cappelletti stuffed with duck, with refreshing pieces of bitter orange, as well as the gnocchetti sardi with Adriatic tuna fillet, fish sauce and chives, with roasted kale. Lamb in terrine, a trio of sausages for two, and a donut with red bouillabaisse, smoked mussels and capers round out the rich dinner flavors of Chef Nikolić's menu. Petra Jelenić's desserts - a reinterpretation of the classic Sacher torte, apple and cinnamon and a particularly light combination of carrot and caramel – creates a sweet extension to the ambitious menu. With an intriguing cocktail and wine list, and dynamic music, evenings at Boogie Lab are a good opportunity for great fun in an intriguing place.
