L'avis de Gault&Millau
Located on the cape of the Zadar peninsula with a beautiful view of the sea and the city lights at dusk, Kaštel restaurant of the Bastion Hotel is an ideal choice for hungry romantics. Their approach to food is very modernbut they honour at the same time the well-known Dalmatian culinary tradition. We started dinner with Adriatic tuna tartare. We liked the idea of serving it on homemade crispy rice chrisps that looked like a sea boat. Wasabi paste and ginger mayonnaise gave the tuna a breath of fresh air. It was accompanied by a light Malvasia. When choosing a warm appetizer, we liked the name Zadar octopus. The octopus cooked in its own juice and white wine, served with potato and orange espuma (a creamy foam), was recommended by the waiter. Although the spices were nicely balanced umjesto prekrizenog: the dish had a nice but somehow intense taste. The octopus prepared in this way might may be a better choice for lunch. The best was the choice of the main course. The flavours of the slow-cooked, delicious lamb - served in a shape of cube - that melted in your mouth complemented well with the mild flavour of au gratin potatoes and demiglace with Mediterranean herbs. Homemade white bread, prepared with its own yeast with local extra virgin olive oil, was a great addition to the meal. For dessert, we chose a modern version of cheesecake with finely chopped pistachios and homemade caramel. The nutty taste of pistachios and homemade caramel topped over mascarpone cream are among those desserts that we would love to order every time. Every bite in the Kaštel restaurant was a nice gastronomic experience that we definitely recommend. In summer the table should be booked in advance.
