Chef Melkior Bašić presented Croatia at the Chefs World Summit in Monaco
Monaco, November 27, 2017 - The only Croatian representative at the Chefs World Summit was the young and prospective chef Melkior Bašić. The head chef of the Alfred Keller restaurant, in the Alhambra Boutique Hotel on the island of Lošinj, Melkior Bašić was a participant of a panel called "Wild harvesting in the surrounding region".The best chefs from all over the world spoke of autochthonous herbs and local foods in the kitchen and the specific style of cooking that they nourish.
Organized by Gault & Millau Croatia, the young chef Melkior Bašić has come alongside the leading world chefs: Regis Marcon, from the Regis et Jacques Marcon restaurant, crowned with five Gault&Millau toques and three Michelin stars, Edouard Loubet from the same name restaurant, also crowned with five Gault&Millau toques and two Michelin starts, and Joan Roca from the El celler de can Roca restaurant, crowned with three Michelin stars.
This is the beginning of the promotion of Croatian gastronomy and chefs organized by Gault&Millau Croatia. This is the first time that a Croatian chef participates as a panelist on this culinary event, that each year gathers the best chefs crowned with Michelin stars, Gault&Millau toques and other prestigious international prizes.
"The philosophy of my cuisine is based on the local products quality. The concept rests on the fact that we minimize the usage of spices in a way to give the best of flavours. Clearly defined food access and recognition of guests' preferences, with the inevitable creativity of preparing dishes, are a guarantee of successful work, "said chef Melkior Bašić. Although young, Melkior Bašić has acquired his career experience in 96 kitchens in Croatia and abroad. His specialty is the various techniques usage, such as the minimal thermal treatment of fish, lamb and venison from the island of Cres, in order to maintain the original quality of taste and achieve the almost perfect balance. Great attention is paid to the presentation of food, so creativity and innovation are present in each of his dishes.
Chefs World Summit 2017 is held from 26 to 28 November in Monaco under the auspices of His Excellency Prince Albert II. This year's show of the best chefs of the world is enriched with 40 professional lectures and interesting culinary workshops, and the first day of the Summit is presented the list of the 100 best chefs organized by Le Chef Magazine. The world's biggest gastronomy event in the impressive Grimaldi Forum area in Monaco gathered 1500 chefs and caterers from 34 countries, over 100 culinary stars and 150 exclusive brands.
