Floriana Ružić - Gault&Millau Young Talent of the Year 2020

Young and talented Chef, currently working in Istrian gourmet restaurant San Rocco, Floriana Ružić, got a new shine to her after her promotion. She forged her knowledge learning from and working with the best chefs in Croatia, Italy and Slovenia where she went under a number of educations. This young chef in the past ten years, since she's been working in San Rocco, grew into a creative and competent chef who perfectly fits into the culinary fairy-tale of the gourmet restaurant owned by the family Fernetich. Thanks to the talent, dedication and creativity of the young chef and her mentor, Teo Fernetich, San Rocco grew into one of the best restaurants in Istria. Before becoming the main chef in San Rocco, Floriana ran another restaurant on her own, also owned by family Fernetich, in the centre of the village where the family owned a bistro with local food. She also took part in culinary workshops and festivals, like Gault&Millau's „Ladies Cooking “and „Tastes of Vipavska“ where Floriana represented Istrian experience and tradition. Innovative chef keeps enchanting others with her enthusiasm and her intricate taste for mixing different ingredients together. She loves using season and local ingredients with a specific way of highlighting them which results in wonderful and delicious meals. Besides that, she has proven her skills with a very limited range of ingredients taken from cuisine of the Istrian lower class, like barley, which she combines with precious truffles. Therefore, Floriana is awarded Gault&Millau Trophy Young Talent of the year 2020.
