Dalmatia, the largest tourist region in Croatia, with a 926 islands, numerous vineyards and olive groves, in each of its four parts - which are connected to the cities of Zadar, Šibenik, Split and Dubrovnik - is completely unique. And just as the Dalmatian history was turbulent, which is reflected in the landmarks of its cities, the present is just as exciting - at least when it comes to the restaurant scene. Although with the development of tourism, international cuisines have also appeared there, most restaurants base their offer on what Dalmatia is most proud of - Mediterranean specialties. Their main ingredients are olive oil, garlic, herbs and spices, and a variety of seafood.

Every year Gault&Millau Croatia happily follows the development of the restaurant scene in the Split - Dalmatia County, which in this - still pandemic - year experienced the greatest progress. The restaurants, 71 of them, are listed in the guide - twenty more than last year. Eight of them were evaluated with three toques each. Laganini in the bay of Palmižana on the island of Hvar with its distinctive menu won 16 points from our inspectors, and the other seven restaurants from Split have 15.5 points each - Dvor, Kinoteka, Noštromo, ZOI, Zora bila and Zrno Soli, as the Martinis Marchi on the island of Šolta.

As many as three important Gault&Millau Croatia trophies this year went to the Split - Dalmatia county.

Nikola Marušić won the ‘Great Chef of Tomorrow trophy. In the cramped space of the bistro PINKU Fish & Wine in the old part of Split he creates true small culinary masterpieces - from fish he gets around the corner - at the local fish market.

Trophy “Maitre d’hotel and service” went to the team of chefs and waiters at the Heritage Hotel Martinis Marchi on the island of Šolta. Its director Ivan Kuret, and chef Toni Miloš gathered a team that, according to Croatian Gault&Millau inspectors, is up to the task on every occasion.

Restaurants in Split and its surroundings offers a variety of Mediterranean dishes

Jelena and Daniell Nikolla, the owners of the Pandora Greenbox restaurant in Split are winners of the 'Best POP' trophy - because with its meatless concept, superb performance and imaginative decoration, it has become a must-visit place for vegans and vegetarians, as well as for the all food lovers.

Although restaurateurs are struggling with various problems this season, from labor shortages to food price hikes, restaurants that have a yellow Gault&Millau sticker on their doors continue to resist all challenges - and that's why we highly recommend them.
