In the heart of Skradin, where the alleys open up to the city park, behind a high stone wall is Cantinetta, one of the most famous symbols of Skradin gastronomy. Entering the courtyard reveals the tables under the treetops that create a sense of peace and shelter in the shade of the walls. At the helm of the kitchen is chef and owner Tome Računica, the successor to the former tavern Kod Ane, a place where his mother cooked preserving the original flavours of this region for decades. We started the meal with the carpaccio of white fish, exceptionally fresh with a citrus and rock samphire marinade that emphasizes the purity of the sea flavour. From the rich menu, we highlight the fried smelt called Prokljanske čokalice, an unavoidable start at Cantinetta: crispy, fragrant and salty just right. They owe their speciality to the lake Prokljansko Jezero, whose brackish, sweet and salty water gives the fish a unique fullness of flavour. Along with them, we tasted the baby cuttlefish on a pan, sweet and soft, as proof that simplicity pays off when the ingredients are top-notch. This was followed by grilled lamb – three juicy, perfectly roasted pieces of leg with crispy fries. Finally, the Skradin cake is a must, a dessert that is part of history. Flourless, made from walnuts, almonds, eggs, citrus, Prošek (Dalmatian sweet wine), rum and rose brandy. Intense and luxurious, it is proof that tradition can be truly refined. The wine list combines Dalmatian and continental labels, with a special place for the Bibich winery, closely associated with the Skradin climate. Cantinetta remains a restaurant that lives its own authentic story – where the guest does not feel like a passerby, but like someone who belongs there, especially in the evenings when the guitar plays and people sing from the heart.
