Gault&Millau presents

Distillery A white goose was once a real pet on the estate of former journalist Emerik Pišl and his wife Ivana, an agricultural engineer, so it became the name of their craft distillery in Đakovo. Today, Bijeli gusak (White Goose) is a must-visit destination for tasting premium fruit brandies, gins, and other spirits. Set on the outskirts of town on a gentle rise with sweeping views, the distillery relies on plums and apples from its own organic orchards, as well as fruit sourced from nearby family farms. Determined to master a craft he initially knew little about - having inherited the land rather than worked it - Emerik Pišl was among the first attendees of Zagreb’s Uplift Academy, where he gained valuable insight into running a modern farm business. Always striving for excellence and open to innovation, he commissioned state-of-the-art stills that enable the production of premium-quality distillates. He also collaborated with chef Otto Grundmann, a Đakovo native who worked at London’s Nobu restaurant, co-owned by actor Robert De Niro. Otto created the first White Goose cocktail.
