Gault&Millau presents

Delicatessen In the Kutjevo and Požega region, the Hruška family is best known for producing kulen, as well as other cured meat products - from ham and bacon to kulenova seka, sausages, cracklings, head cheese, dried pork neck, and cured cuts. The family farm for pig breeding and meat processing was founded three decades ago by farmer Vjenceslav Hruška in the village of Bjeliševac, inspired by participation in a kulen festival. High jury scores and a champion title encouraged him to start his own pig breeding, and everything he knew about kulen production he learned from his uncle Zlatko Klesinger, a restaurateur and kulen maker from Požega. He adhered to tradition in production, aware that the key factors are meat quality and excellent paprika, which he sources from Donji Miholjac. His pigs are fed exclusively with wheat, barley, corn, and alfalfa - grass dried for winter. The family tradition is now continued in the same way by his son Damir, a food technologist, with the help of his brother-in-law Milan, while their wives Mateja and Vlasta also assist. There is plenty of work, especially during pig slaughter season or holidays such as Easter, when up to a hundred pigs need to be processed. However, everything is sold - down to the last sausage- either at the farm gate or in their shop in Požega.
