Oil mill This top-quality extra virgin olive oil of golden green colour is a blend of selected indigenous Istrian varieties – Istrian bjelica, buža, rossignola, carbonazza and puntoza from the Barbariga area. SALVELA AURUM is an oil whose aroma is distinctly fruity, freshly cut grass and herbs, while the taste is dominated by bitterness and spiciness, additionally enriched with the scents of green almond and artichoke. Salvela Aurum oil goes excellently with fresh cottage cheese, vegetable cream soups, sea bass carpaccio and dark chocolate ice cream. Salvela olive groves are located in Barbariga, right by the sea on the western coast of southern Istria. 7.200 trees of local varieties have been planted on 30 hectares of land, some of which are several hundred years old. In addition to Aurum, Salvela offers Buža, Istrian bjelica, Rošinjola and Punta Cissana. Salvela oils are processed in their own oil factory in Vodnjan, where all the products can be tasted.
