Pea and mint soup by chef Lionel Levy
We bring you the peas and mint soup recipe of the famous French chef Lionel Levy from Hotel Dieu InterContinental Marseille. He prepared it on the workshop on how to get the most out of ingredients and reduce food waste. You can quickly prepare this simple recipe and soothe yourself with a refreshing soup on hot summer days.
Ingredients:
- 1 kg of pea pods
- 2 potatoes
- 100 g of peas
- 5 g of pine nuts
- ¼ of sweet onion
- Salt
- Sugar
- 10 g of fresh ginger
- 1 handful of mint (leaves and stems)
Preparation:
Peel and chop the sweet onion and fry it in olive oil.
Add the pea pods and potatoes and quickly fry. Before it changes colour, add 2L of water with mint. Mix in a blender and strain. Season to taste. Add grated ginger and fresh peas.
