Chef's Restaurant
A small family restaurant, located on the high ground floor of a house in the center of the town, cherishes the Istrian tradition, autochthonous ingredients and flavors of Istria. It is elegantly decorated, it looks like an elegant living room of a bourgeois family whose salon quite naturally suits the piano, luxurious chandeliers, fine porcelain and candlesticks. The restaurant can accommodate about 40 guests, the atmosphere in it is very pleasant, and the service is discreet and professional. On the table are three bottles, three blends of olive oil Baioco from Galižana, a small town near Vodnjan, the town after which the restaurant was named. The offer includes mainly Istrian specialties: prosciutto, pancetta and Vodnjan curd and goat cheese, dishes made of boškarin, truffles, cod, pasta, risotto... Here you can eat traditional Istrian maneštra with prosciutto and corn. Their white cod served with warm homemade bread and olive oil is a great introduction to the feast, in every season. As well as boškarin batuda, an expertly spiced tartare served in the shape of a wreath. Saffron risotto with boškarin bone marrow is a real delicacy for gourmets, and the thick aromatic soup is rich in mushroom pieces. Fuži, pljukanci and gnocchi are served in a strong boškarin sauce, the meat of which melts in your mouth. Vodnjanka highlights small producers on the menu, from whom they procure groceries, which certainly contributes to the authenticity of their gastronomic story. Desserts and wines also rely on the Istrian climate, just let the waiter recommend it.
