The impressive contrast of history and the present at restaurant 360 can be felt at every turn. In its modernly appointed indoor space, on the terrace of the medieval walls, as on the plates as well. The dishes are superbly designed, of simple geometric shapes, and the food follows suit. Visually attractive, modern, technically precise without sacrificing harmony of flavor. In each course one ingredient dominates, deeply rooted in the gastronomic tradition of southern Dalmatia and the Dubrovnik, native region of chef Marijo Curić (Gault&Millau Chef of the Year 2023). Using modern culinary techniques for more than a decade, he pays tribute to traditional dishes, again and again giving them a new guise and thereby emphasizing the authenticity of local ingredients. This season an attractive starter pairs a Ston oyster harmoniously with tuna. Prawns are combined with fennel and artichoke; foie gras with apple, pear, kohlrabi and dates. Scallop tartare is accompanied by soy mousse and a gazpacho dressing. Crispy sweetbreads are joined with cheese ravioli, and lamb is served with eggplant cream and wild onion. The chef and his team continuously demonstrate that the best dishes are those that retain their original flavour. The gastronomic identity of restaurant 360 is clear: simplicity, a balance between technique and imagination, and harmony of flavors that evoke emotions. All of this, together with the superior service and relaxed atmosphere, an impressive selection of bottled wines and wines by the glass, explains why there is no dinner at 360 without a reservation, even though service is offered in three slots.
