Gault&Millau's review 2026

Bome is a small boutique restaurant located in Split 3, just above the new Żnjan beach, surrounded by apartment buildings, but with a terrace overlooking the sea. The restaurant still maintains a very high level of fine dining. The best dishes are the meat and fish tartare, which, of course, they have kept on the menu despite all the changes, but in a way that has significantly improved them. The excellent meat tartare is made from aged rump steak, which they serve theatrically under a smoked glass lid, and superbly decorated with fermented purple onion cream and homemade mayonnaise. They always have new and interesting soups. The pumpkin soup with hazelnut crumbs and special cow’s cheese was, like all their soups - excellent. The other dishes are also very well thought out and presented, but they are more accessible to a wider audience. Slow-roasted pork belly with celery puree in its meat sauce is often a dish of Dalmatian brunches. Following in that vein are the roasted veal with mashed potatoes and demi-glace, as well as the maccheroni with veal cheek ragout. All of these are local dishes in a fine-dining interpretation with special sauces, creams and emulsions. Their desserts are also innovative. The tiramisù looks different, but the flavours are the same. The quality of the restaurant Bome continues to grow, and in addition to good food, the young professional team will brighten your day.
