A four Bota Šare restaurants in Dubrovnik, Mali Ston, Split and Zagreb are synonymous for the authentic flavours of the Adriatic fish and shellfish, coming from the Mali Ston Bay. Each in a different setting, they manage to maintain their gastronomic identity. Manu steps lead to Bota Oyster & Sushi bar in Dubrovnik, located inside the oldest part of the city walls, but effort is worth climbing. Charming interior protects in summer heat but the small terrace with only a few high tables, is more vibrant. They prepare in a modern way the freshly caught fish from the southern Adriatic, bluefin tuna, greater amberjack and swordfish, oysters and mussels, as well as local scampi and prawns. With a simple selection of fresh ingredients and Japanese technique, they achieve the harmony and the richness of the taste. Don’t skip the oysters, fresh or tempura. Tuna tartare a la Bota with anchovies, capers, olive oil and tabasco, as well as tuna carpaccio, seasoned only with a little salt and pepper, olive oil and lemon, are superb. We recommend the Spring rolls Bota – a tuna fillet stuffed with a mixture of cream cheese, prosciutto, olives, spring onions, fried in panko crumbs and served with wasabi mayonnaise. A dish that highlights each ingredient. The waiters are kind and professional, they completely fit into the motto of the restaurant: “Stay authentic, offer a unique experience, achieve perfection and stay connected with people”.
