Gault&Millau's review 2026

The restaurant Bronzin, on the Šibenik waterfront, has a spacious, beautiful terrace covered with a pergola that provides shade on hot summer days. Although we visited in cooler weather, we decided to sit outside because of the beautiful view of the sea. The glass of excellent prosecco as an aperitif added to the atmosphere. This time we skipped the appetizer and ordered the main courses right away. The juicy sea bass in papillote, baked in the oven, on a bed of zucchini and carrots retained the smell and taste of the sea. The beef tagliata was also excellent, cooked medium rare to our liking, served on arugula, but instead of being sprinkled with shavings of grated parmesan, four thin ​slices of cheese were arranged on each side of the meat. Both dishes arrived at the table at the same time and both showed that the kitchen respects the ingredients and the preparation of the dish. We had the impression that this time the presentation of the food was not as attractive as it used to be. Bronzin always had beautifully arranged dishes and we hope that they will go on that way. The extensive wine list includes local, regional and international wines, some of which are also served by the glass. Along with the attractive ambience, the food at Bronzin is still very good, but there is room for improvement regarding service and dish presentation.
