If you want to know what a fine-dining restaurant looks like, then head to Rovinj’s Cap Aureo Signature. Located in the luxurious Grand Park Hotel, it will offer you a gourmet experience like top restaurants in all the big cities around the world. With a modern interior and glass walls leading to a terrace overlooking the marina in front of the hotel and the town of Rovinj, Cap Aureo bears the signature of chef Jeffrey Vella, a Maltese who settled in Croatia and who has been for years the Executive chef of all the restaurants of the large Maistra hotel group. A master of contemporary culinary techniques, Vella particularly appreciates local ingredients from which he creates his marvellous creations. Cap Aureo serves exclusively a tasting menu, which goes up to 20 courses. The portions are more like bites, but if you can’t quite taste everything, you can stop earlier, for 5, 7 or 10 courses. They will offer you fish, shellfish, crabs, seafood, lamb, black pork, mushrooms and amazing vegetables. The menu changes depending on the season and you can also get a vegetarian version. They indicate the origin of each ingredient, and how far away the place of production is from the restaurant itself. Every plate that comes in front of you is a small masterpiece, served in an elegant and innovative way. The textures, the flavours and the aromas are the expression of a precise cuisine that puts the ingredients in the foreground. Their creamy risotto served with a small omelette of red shrimp and fennel is especially delicious, as are the seasonal mushrooms or the lamb wrapped in fig leaf with pancetta and anchovies. With your food you can have an excellent wine pairing with top Croatian and international wine labels or extremely attractive cocktails. The educated staff are omnipresent.
