One of Dubrovnik’s oldest and most famous restaurants, Proto, has witnessed the development of tourism in the city from the days of the Austro-Hungarian Empire to the present. Founded in 1886, it occupies a historic palace within the old town, where stone walls and arches preserve the atmosphere of past centuries. The elegant interior features a limited number of tables that create an intimate setting, while the covered upper terrace overlooking neighbouring palaces is particularly charming. Proto is renowned for Mediterranean cuisine that blends Dubrovnik tradition with refined gastronomy. Among the highlights are octopus salad and gratinated oysters from Mali Ston, while main courses focus on fresh fish from the daily catch prepared simply on the grill with olive oil, salt and lemon. Monkfish medallions, with their firm, lobster-like texture, are prepared grilled or in a delicate sauce. Other specialties include gratinated sea bream with black-olive pâté, seafood risotto coloured with cuttlefish ink, grilled octopus tentacles, flambéed scampi tails, homemade ricotta ravioli in sweet wine sauce and lobster with pasta. The menu rarely changes, and regular guests appreciate that its quality remains equally consistent. The wine list is extensive and strongly focused on local and regional varieties.
