At the foot of the Zadar ramparts, where history gently touches the sea, there is a restaurant Foša, a renowned gastronomic destination in the city. The interior, designed by architect Andrej Došen, with stone walls, wooden ceilings and a Murano chandelier, creates an atmosphere of intimacy and sophistication. The terrace offers a priceless view of the Zadar canal, ideal for romantic dinners, celebrations of special moments or relaxation with the sound of the waves and the sunset. At the helm of the kitchen there is Damir Tomljanović, one of the most famous Croatian chefs, whose name is synonymous with creativity and excellence. We tasted a selection of sushi, which delighted us with its freshness, precision and balance of flavours. As a warm appetizer, we were served Damska buzara (Lady’s buzara) – mussels in a rich tomato sauce, served with creamy polenta and light cheese espuma, a dish that combines tradition with a modern approach. For the main course, we chose a grilled turbot fillet, served with potato and cottage cheese croquettes, a sophisticated fish sauce, and kale and cabbage sautéed in olive oil with a delicate cauliflower cream. The dish demonstrated exceptional technical precision and respect for the main ingredient. The experience was completed by the signature cocktails, inspired by the Mediterranean and local herbs, as well as the carefully composed wine list with top Dalmatian and international labels. The personnel are professional and pleasant. For a sweet ending, a modern, elegant and balanced version of pistachio cake was served. Foša is not just a restaurant but an experience of Zadar through the flavours, the space and the moment.
