At the close of the 15th century, Hvar town experienced a significant boom marked by the completion of its city walls and the construction of the Franciscan Monastery. It was during this era that the noble Jakša family erected a Late Gothic palace which continues to dominate the historic core. Today this storied setting serves as the home of Restaurant Giaxa, where centuries old stone arches and an authentic interior evoke the charm of a rich past. The restaurants culinary concept is rooted in Mediterranean traditions and local ingredients. The menu is largely dictated by the daily catch, featuring fresh seafood such as octopus and tuna carpaccio, marinated fish, and monkfish tartare. Alongside regional classics like a buzara lobster, grilled fish, brodetto and the traditional Hvar gregada (light fish stew), the kitchen offers creative innovations. These include croshi, a Croatian take on sushi using smoked tuna, scampi, and fish carpaccio, as well as modern vegetarian options like cauliflower steak. The professional personnel and the extensive wine list complete the dining experience within the palace walls.
