Chef's Restaurant
Somewhat remote from the usual Kvarner food destinations, the restaurant JIST enjoys a reputation as one of the best steakhouses in Croatia. Located in Viškovo, a little town that forms part of the so-called Rijeka Ring, it offers an impressive selection of steaks that arrive in its kitchen from the farthest corners of the world – from Australia, Uruguay, and Canada to Japan. Of course, the menu features the steaks from the most prized and expensive Japanese Wagyu and Kobe beef. All cuts of meat are vacuum-sealed, and the waiter expertly presents and weighs them in front of the guest. This ritual is often entertaining and sometimes educational, creating a sense of transparency and allowing the guests to choose according to their budget – since prices at JIST are not insignificant. The meat is dry-aged for at least four weeks in aging cabinets displayed within the restaurant. This detail enhances the atmosphere and, above all, contributes to the unique flavour of the steaks, which are technically superbly prepared and served with a sauce of the guest’s choice. In the pleasant rustic interior, dominated by wood and stone, the menu includes dishes such as creamy goose liver torchon with brioche, Kvarner scampi, and Kvarner soparnik (a flat paper-thin savoury pie) with Grobnik cheese and collard, as well as veal cheeks and duck legs. They also prepare fish dishes. Nevertheless, JIST’s main strength are the steaks, the extensive wine list, and the friendly and competent personnel.
