Gault&Millau's review 2026

When you arrive in Humac the phrase ‘reaching for the stars’ takes on a whole new meaning. Minimal light pollution allows for a truly unique experience, dining under the open sky, illuminated only by the gentle glow of candles. Set in a former shepherds’ settlement on the island of Hvar, the Humac tavern builds its rustic charm through careful attention to detail. Stone tables scattered across the garden resemble sculptures naturally integrated among the olive trees, while views toward Brač and the scent of aromatic herbs create an atmosphere that is both striking and effortlessly simple. Without electricity, the kitchen relies on traditional methods, cooking over a open fire grill or under a peka (baking bell) Starters include local cheese, salted sardines, and vegetables from the tavern’s own organic garden. For the main course, the octopus cooked under the peka comes highly recommended, prepared exclusively from specimens caught during the winter. The meat is tender, carefully handled, and retains the characteristic firmness that makes octopus so distinctive. The overall experience in Humac is unmatched on Hvar. The food is flavourful, and the setting, dining under the stars in such an authentic environment, adds an unforgettable layer to the visit.
