For those seeking to dine in Hvar town while avoiding the usual crowds and noise of one of the Adriatic’s most popular summer destinations, Konoba Maestro presents itself as an ideal choice. The terrace, featuring about ten tables, is tucked away in a quiet side street adjacent to St. Stephen’s Cathedral, positioning it off the main tourist routes. This location offers a different, more relaxed Hvar experience. As the symbol at the entrance suggests, Maestro bases its focus on octopus and fresh fish, which are sourced through a direct family operation: two brothers handle the fishing, while the third manages the tavern itself. Among the roughly ten dishes on the menu, octopus is central, available as a cold and hot appetizer, and as a main course. The octopus salad comes with plump capers and black olives, and the bluefish pâté, rich and expressive in flavour, is served with warm, homemade bread. The tavern’s signature dish is grilled octopus, presented simply yet rustically, leaving a strong visual impression. The rest of the menu features Dalmatian classics such as gregada, brodetto, risotto, and Korčula style maccheroni. Maestro delivers an authentic dining experience that stands apart from Hvar’s typical tourist offerings. Its wine list is notable for including 60 percent natural wines, emphasizing unique and carefully selected labels.
