As part of a family estate on the slopes of Plešivica, Korak Restaurant is deeply connected to the landscape from which its wines and ingredients originate. The cooking philosophy of Chef Bernard Korak (G&M Trophy Young talent of the year 2021) stems from the same mindset behind the wines - minimal intervention, maximum expression. Ingredients come from their own cultivation or from selected local producers, and the menu changes in accordance with the rhythm of nature. The restaurant operates exclusively by prior reservation and does not offer an à la carte menu. Two tasting menus are available - five and eight courses - with optional wine or non-alcoholic pairings. Dinner begins with a generous selection of amuse-bouche clearly communicating the philosophy of sustainability: sourdough bread with hand-churned butter wrapped in beeswax, homemade cheese, dry-cured ham, and old-bread crisps. The courses follow in a well-balanced rhythm: a light opening with young kale and vongole sauce, a precise and intense scampi bisque with caviar and kumquat, and an exceptionally successful ragout of local snails with wild herb pesto. An intermezzo of fresh radicchio with coffee and citrus delivers an unexpected but highly successful play of bitterness and freshness. The main course dry-aged venison fillet with quince, buttermilk, horseradish, and Jerusalem artichoke - demonstrates a deep understanding of flavor balance. The meal concludes with three thoughtfully crafted dessert courses. The entire experience is accompanied by discreet, professional service and a calming natural setting.
