The Baranja village of Suza is known for its high-quality wineries – and for Kovač Čarda. This restaurant features a large open terrace and an enclosed one, as well as a rustically decorated interior. Baranja cuisine is carefully preserved here, especially freshwater fish specialties, which is why the interior is adorned with mounted fish heads and traditional tools. They are best known for their fish stew (paprikaš), cooked in cauldrons over an open fire, allowing guests to watch it slowly simmer. As it takes about an hour to prepare, it is recommended to order the meal and arrive at the agreed time. Guests can choose the level of spiciness, though even the “less spicy” is usually hot enough for most. The paprikaš is typically made from several types of fish. You can order only the fish meat without the head and tail, and it is served with homemade wide noodles. Among other dishes, the standout is catfish perkelt (stew), featuring large, juicy pieces of meat in a thick sauce of tomatoes, onions, and paprika, served with noodles mixed with fresh cheese and lightly fried bacon. If fried sterlet fish is available, it is definitely worth trying, as it is a rarity in similar restaurants. Homemade brandies and wines from top Baranja winemakers solve all “liquid matters” at Kovač Čarda.
