Secluded in the idyllic Vinogradišće Bay on the Pakleni Islands, Laganini has become a beacon of Hvar’s gastronomy. Its prestige stems from the masterful synthesis of fine-dining protocols, impeccable service, and the relaxed allure of the Mediterranean. Accessible only by boat, the restaurant maintains a unique, exclusive character. Through dishes that are as thoughtfully crafted as they are visually striking, Laganini offers a culinary experience that combines local ingredients, modern techniques, and the effortless rhythm of Hvar’s coves. The caponata, inspired by Sicilian tradition, captivates with vibrant colours and a balanced interplay of sweet-and-sour vegetables, raisins, and pine nuts. In a more robust register, the wood-fired squid is served in a substantial earthenware dish, filled with a mixture of potato, goat cheese, and pesto genovese.
