Gault&Millau's review 2026

Makarun is located in the very centre of the old town, tucked into a beautiful, peaceful courtyard with the aristocratic atmosphere of the neighbouring Palace Milesi. Faithful to the tradition, but with a strong focus on fine dining, they continuously cultivate an honest approach in an uncompromising effort to be their own and always better. Their dedication to organic ingredients and home-style approach should be especially commended. Namely, the dishes they prepare originate from the rich old Dalmatian table, so in Makarun they cultivate the tradition, but in a new and modern guise. First of all, we would recommend the vegetarian starter with beetroot tartare. Simple, light, but at the same time a carefully composed and complex dish with the addition of chickpea purée, vegan cheese and small tomatoes. The fish dishes are very good. All the dishes feature the authentic flavours of the real Dalmatian brodetto (seafood stew) or risotto, Swiss chard, polenta or other essential local specialties, but are arranged in a way that represents the purified essence of the Mediterranean. There’s a reason for that. Dalmatian brodetto is a wonderful old-fashioned dish, but today’s urban diner doesn’t want to struggle with fish bones and pick through their plate. So here you’ll get a consistent original packaged in a modern, tailored dish. However, our favourite is the extraordinary handmade lobster maccheroni, the closest to the original, prepared according to an ancient recipe and which is their signature dish. Fine food, a pleasant atmosphere, professional staff and an extensive wine list: these are all reasons to visit Makarun.
