Gault&Millau's review 2026

Nonica is a pastry shop with distinctive Hvar scents and flavours - bitter oranges, lemons, almonds, carob, honey, olive oil, rosemary, lavender. All the ingredients that Hvar housewives and grannies (nonice) used in the past to prepare desserts. The main difference is that the owner of the pastry shop Anne Marie Šurlin interprets these ingredients in a modern way. Located right next to the Church of Our Lady of the Annunciation, the Nonica pastry shop offers desserts that take older Hvar residents back to their childhood, and reveal to their guests the flavours that usually ended holiday lunches. Anne Marie is particularly proud of the forski koloc (the cake fom Hvar in the local dialect) based on olive oil and spices, the gingerbread imbued with the flavours of local honey, and the Hvar cvite (flowers), which are flavoured with mistro, a liqueur similar to anisette. The display cases of Nonica, which is only open during the tourist season, show numerous colourful cakes included the brownies. The owner graduated at the Cordon Bleu Culinary Academy in London.
