Dubrovnik’s Bellevue Hotel truly offers a magnificent view of the sea, and the terrace of its fine-dining restaurant Vapor seems to float above. The interior is modern, equipped with designer furniture in soothing warm tones. The atmosphere is unique: while the waiter presents you with a menu consisting of seasonal Mediterranean cuisine specialties, the sea waves crash against the rocks. Chef Mate Matić and his team prepare delicious, luxurious and visually attractive dishes. The harmony of these components is achieved by choosing simple but premium ingredients. So, through the tasting menu, we had the opportunity to try a delicate crab meat salad, served with cucumber carpaccio, citrus mayonnaise, avocado cream and caviar. A pleasant surprise were the scallops in seaweed tempura with miso cream of roasted cauliflower. The fillet of white Adriatic fish is poached in olive oil and served with pea and artichoke juice, parsley oil and olive puree. This was followed by a perfectly roasted beef fillet with asparagus glazed in red wine jus. The chef’s specialty from the a la carte menu is lobster tail gratinated in butter and served with baked polenta and mussel veloute. Following the dishes the friendly waiters are happy to recommend excellent wines from Croatian vineyards. This well-rounded Mediterranean experience in a luxurious setting is highly recommended, and Vapor is only a fifteen-minute walk from the old town.
