Chef's Restaurant
It's hard to imagine life without salt. This magical grain that gives everything character has also received its address in Zagreb. Located in Petrinjska Street, in the immediate vicinity of the main city square, the Croatian tapas bar of chef Mate Janković confirms itself as one of the most exciting projects of the Zagreb gastronomic scene. The concept combines the tradition of Croatian regions with modern techniques in tapas format, and its greatest value is that it manages to translate familiar flavors into a completely new form, without losing their original identity. The menu brings cold and warm tapas, and each represents a thoughtful dedication to the local heritage. Among the cold ones, the refreshing, precisely balanced Neretva gopher ceviche stands out, as well as the visually attractive beetroot ravioli, filled with homemade cottage cheese with a sprinkle of pumpkin seed granola. Culinary charm and maturity are most evident in hot snacks. Zagorje štrukli in the form of gyoza, steamed and baked in cream cream, Skradin veal ragout arancino with parmesan cream and grated nutmeg, and torn lamb croquettes with intense flavors are among the most successful performances of modern bistronomy. If there is room left, the not too sweet, foamy interpretation of traditional šnenokli nicely rounds off the story of small bites. A well-coordinated service and a relaxed atmosphere naturally accompany the concept of sharing. An urban place to taste Croatia in one bite.
