Štajun, a word from the Hvar dialect meaning season, reflects the restaurant’s philosophy: dishes crafted from seasonal ingredients. Tucked away in a quieter part of Hvar, off the main tourist paths, Štajun charms with a courtyard terrace where greenery and rustic elements evoke the relaxed atmosphere of an open-air living room. The menu is designed as a series of culinary stories, divided into five thematic sections: raw, cold, warm, seafood, and meat. Highlights include scallop carpaccio with spinach and mint, as well as risotto with local shellfish and snails. Main courses feature seafood specialties such as grilled fish, lobster, and prawns, while the meat selection draws from Croatian, Irish, and Japanese cuts, offering guests a great choice of premium steaks from diverse culinary traditions. The restaurant also offers a chef’s table, where diners explore Mediterranean specialties across six courses, complemented by an extensive wine list that spans Croatia’s finest regions and selected labels from Italy, France, and Spain.
