Prestige Restaurant
The restaurant Triton, located on the first floor of the Radisson Blu Hotel, has successfully established itself as a valuable gastronomic destination on the Split scene, offering a combination of top-notch cuisine and a refined ambiance. The spacious and carefully designed interior, with large glass walls, selected artwork and greenery, as well as a large terrace overlooking the sea and the island of Brač, give a sense of privacy and luxury. Here they pay attention to each detail, starting from the china, the glasses and the napkins. Under the leadership of the legendary Dalmatian chef Zlatko Marinović and his grandson Stipe Marinović, Triton is a fine- dining restaurant with a menu deeply rooted in Dalmatian tradition and the flavours of the sea. The twist is in the culinary technique and the presentation of the plates that belong to high gastronomy. We started with the Adriatic tuna, thinly battered and served on foie gras and toasted bread that stands out. The salty and clean aroma of the tuna is harmoniously complemented by the fullness of the goose liver, with the discreet addition of olive oil and chives. The second appetizer, crispy cod croquettes with leek and white truffle, served on a cream of Greek yogurt and cuttlefish ink, brings a layered but balanced flavour in which the truffle does not dominate, but rather enriches the dish. This is followed by a fillet of fresh, lightly grilled cod, which retains its delicate texture, with a spicy salsa, marinated julienne zucchini and Dalmatian salad, creating a light and refreshing gastronomic breakthrough. The meal ends with a contemporary dessert – a parfait of almonds and dried figs cooked in Prošek (the Dalmatian sweet wine), with sage jelly, roasted carob powder and raspberry cream, which offers a harmony of flavours and textures without being overbearingly sweet. Triton stands out with its superb offer of fresh fish and seafood, precise preparation, attractive presentation of dishes and an extensive wine list with carefully selected Croatian and international wines and the best champagne labels. The cordial, unobtrusive and professional personnel round off the entire experience.
