In the very centre of Šibenik, at the beginning of the waterfront, there is the Visiani bistro & bar. It was named after the park of the same name, Robert Visiani, which is located nearby. A stone house with a small terrace in front of it hides a modern bistro, a popular gathering place for local residents and their guests. The bistro exudes a warm and relaxed atmosphere. The long bar, along which there is a friendly staff, leads to the open kitchen from which you can follow the hustle and bustle of the staff led by Grgo Bačelić, the young hope of Šibenik’s gastronomy. The menu, which changes seasonally, features traditional, sometimes even forgotten Dalmatian dishes, with a modern twist. So you will eat the orzotto with broad beans cooked with the bone of the prosciutto or the croquette made of beef head. There are several vegan dishes on offer as well as an unusual selection of fish such as pigeon fish and smoked pike. We started with a butternut squash soup, which was creamy and nicely seasoned. Then we tasted the mussels with smoked paprika and crispy polenta. A surprisingly good combination of flavours, although the main ingredient, the mussels, could have been a little more prominent. We continued with the extremely delicious orzotto with broad beans on a prosciutto bone. The flavours were powerful and intense but balanced. To finish, we had a creative dessert, Mađarica with mandarin, in which the chocolate was perfectly combined with the sharp and sweet mandarin juice. All the dishes were extremely beautifully presented, and the portions were quite large. The wine selection is extensive, mostly wines from all over Croatia, and many of them can be ordered by the glass. During the winter, they hold wine evenings with wineries from the surrounding area, as well as dinners by visiting guest chefs from the restaurants in the region. Visiani bistro & bar is well on its way to becoming an unmissable place for the residents of Šibenik and their guests.
