Although šipun is an old Croatian word for the flower of the wild rose (rosehip), the focus of Šipun Winery and its owner Ivica Dobrinčić is on indigenous grape varieties. Agronomist and nurseryman, Dobrinčić is known for reviving nearly extinct grape varieties and is considered a guardian of Kvarner’s wine heritage. In vineyards located in the Vrbničko polje (Vrbnik field) and surrounding hills, they cultivate Trojišćina, Žlahtina, Sansigot (Sušćan), Jarbola, Belina, Kamenina, Debejan, and others. The winery produces small quantities with minimal intervention. Their most famous and awarded wine is Žlahtina, along with Hlam 9 (premium Žlahtina). They also produce the sparkling Maličić from this variety, as well as the excellent rosé and the sparkling wine Vila from Trojišćina. Their red blend Kapitul is also well known. Dobrinčić continuously investigates old and abandoned vineyards. He is currently working on the revitalization of two forgotten local varieties.
